Eureka Burger

Jim Monroe's Eureka Burger


INGREDIENTS:
1 each Hamburger bun

1 each 1/3 lb. Hamburger
2 thin slices Cajun sausage (hickory smoked Cajun style links)
cut down the length, (sausage bacon)
((1) ¼ lb. link yields (2) burgers)

2 each Jumbo shrimp 16/20 count size P&D
1 ¼ oz. Chipotle sauce (recipe follows)

1 each Medium cheddar cheese ¾ oz slice
1 leaf Lettuce green leaf

3 thin slices Tomatoes roma
1 thin slice Red onions

3 each Pickles (sliced )

Salt and Pepper to taste

Olive oil as needed

DIRECTIONS:

  1. Prepare a charcoal grill with 100% mesquite charcoal

  2. Wash and prepare lettuce, tomatoes, red onions, pickles

  3. Peel and de-vein the shrimp

  4. Grill the hamburger patty to doneness of your liking, season with salt and pepper to taste

  5. Grill the sausage over the mesquite coals

  6. Coat the shrimp with olive oil and season with salt and pepper and grill over the mesquite coals

  7. When all items are grilled to correct doneness, place cheese on burger, sausage on cheese and shrimp on sausage.

  8. Brush each side of hamburger bun with olive oil and toast over grill.

  9. Using a total of 1 ¼ oz (by weight) of chipotle sauce, coat each side of bun

  10. Assemble the burger as follows: bottom bun, sauce, lettuce, tomato, onion, pickle, burger, cheese, sausage, shrimp, sauce, top bun.

"Dad's Baked Beans"

Jim Monroe's "Dad's Baked Beans"

INGREDIENTS:
Baked Beans
Yields approx. 1 Gallon

3 strips Bacon
1/2 medium Onion
1 each Bell pepper green or red
1 tbl Yellow mustard prepared
1 1/2 cups Ketchup
3/4 cup Brown sugar
1/4 cup Black Strap (brand) molasses
1 – 1 1/2 tbl Baked bean seasoning (recipe follows)
1 1/2 small 15oz cans Canned pork and beans
1/2 small 15oz can (rinsed) Canned kidney beans
1/2 small 15oz can Canned chili beans
1 small 15oz can Canned beans of your choice


Baked Bean Seasoning
Yields approx. 2.5 Cups

¼ cup Kosher salt
3 tbl Ground black pepper
¼ cup White granulated sugar
½ cup Smoked paprika
2 tbl Mustard powder
¼ cup Chili powder ¼ cup Cumin
¼ cup Granulated garlic
2 tbl Cayenne pepper or ground chipotle pepper


DIRECTIONS:
Beans

  1. Dice the bacon and cook over medium heat in large skillet.

  2. Dice the onion and bell pepper.

  3. When bacon is mostly brown and crispy, add the onions and bell pepper. Sauté until onions are translucent.

  4. Add the baked bean seasoning and cook just one minute more.

  5. Add the mustard, ketchup, molasses, brown sugar, and beans

  6. Stir gently and pour into oven safe casserole.

  7. Cover and bake at 350 for 1 hour or internal temperature of 165 is reached.



Baked Bean Seasoning
One might adjust the amount of bean seasoning depending on personal taste.

Combine all ingredients and keep in an air tight container.
